It’s been a long time now since beloved chef Anthony Bourdain took his own life, and fans are still reeling from his death. Now, a video has emerged of Bourdain that serves as a reminder of why so many of us loved him.

The video shows Bourdain explaining how best to cook scrambled eggs, and unsurprisingly, he immediately admits that his approach is “old school.” Bourdain begins by explaining that he has a “love-hate relationship” with scrambled eggs, but the process of making them is something that over time he “necessarily become good at.”

Bourdain described his approach as “old school” because he believes that a scrambled egg or an omelet is “essentially about the egg.” Many chefs these days prefer to create intricate versions of these dishes that become so complicated that they often forget about the egg itself. For Bourdain, less was always more, so he made sure to remind his viewers that the best way of making a scrambled egg was to focus on the egg itself.

Anthony Bourdain’s Scrambled Egg Recipe

After heating up a pan and cracking the eggs on a flat surface into a bowl, Bourdain warned that only salt and pepper should be added to the mixture. He did not believe in using water or cream for this dish, as they would only further complicate things.

“I just don’t feel that milk or cream adds anything,” Bourdain said. “It’s about the egg. You’re not making a quiche here, you’re making scrambled eggs.”

He said that the next step is to beat the egg until you see a “ripple of white and yellow throughout.” Add some butter to the mixture and let it “foam,” then put the eggs in a buttered pan and cook them for a bit. You can create texture by pushing the mixture in a figure eight pattern, but Bourdain warned that if you do this too much, you’ll end up with “tiny little bits of egg as your final product.”

Bourdain concluded by saying that if you follow his steps, you’ll end up with “something fluffy, airy, rippled, with a nice textural note when you taste the egg.”
